Split, the pearl of the Dalmatian coast, has always delighted us with its history and architecture, but also with its gastronomic magic. Among the many restaurants that entice with their smells and tastes, the Šug restaurant stands out.
WHEN YOUNG HANDS JOIN, ANYTHING IS POSSIBLE!
After many years of working in well-known restaurants in Split, two young culinary entrepreneurs, Duje Kanajet and Mateo Kordić, decided to take their careers one step further. Motivated by the Dalmatian “dišpet” and the desire to create something new, they opened the Šug restaurant. They located their restaurant in Tolstojeva street in Split, above Pazar and close to the city center. With its simple interior, pleasant and warm atmosphere and traditional-modern menu, Šug quickly made its way onto the “wanted” list.
“JUST LIKE IN LIFE, SO ALSO IN FOOD, EVERY DISH MUST HAVE SCABIES” – DALMATIAN PROVERB
Just like the old Dalmatian saying goes, except in life and in food there should be scabies! But first, let’s figure out the answer to the question for all those who don’t know what scabies really is. According to the literary definition, it would be a specially prepared and seasoned liquid addition to the dish, i.e. sauce. Given that we in Dalmatia like to spice things up, apart from the meaning of sauce, having scabies also means having “that something”. It is precisely because of that “something” that the restaurant itself was named Šug. Namely, inspired by the traditional dishes of their grandparents, with a touch of modernity, Duje and Mateo have created a menu where everyone will find something for their palates.
DOMESTIC AND QUALITY: ALWAYS AND FOR EVERYONE!
Although a large number of restaurants work only during the season and operate at the expense of tourists, the Šug restaurant has a different vision. You can taste the Dalmatian and Mediterranean delicacies of this restaurant both in summer and winter, according to specially prepared menus: light, summer and slightly heavier, winter. An important ideology of the restaurant’s business is that the ingredients must be homemade and fresh in order to prepare delicious dishes. In addition, the team from Šug has made sure that their dishes are affordable for everyone, so during lunch they serve brunches, that is, home-cooked dishes at reasonable prices, and during dinner you can choose dishes a la carte, i.e. from the menu. If you have the opportunity, visit this oasis of rich flavors and aromas, and feel the magic of Šug, which is also the winner of the Michelin BIB Gourmand award for 2022 and 2023. Here are some of the famous delicacies:
Pjat Šug – a cold appetizer better known as “sea on a plate” decorated with cold brudet, fish ceviche, shrimp pâté and octopus with caviar
Tećada for two – shrimp, octopus, clams and fish with homemade macaroons, served in a rustic bowl
Pasticada with gnocchi
Deer in mange (venison, Korčula macaroons, sheep’s cheese cream)
